Ingredients:
- 2 eggs
- 1/4 cup grated cheese (cheddar or mozzarella)
- 1/4 cup fresh spinach (chopped)
- 1 tbsp butter
- Salt and pepper to taste
Instructions:
Serve hot with toast or on its own.
Beat the eggs in a bowl with salt and pepper.
Heat butter in a non-stick pan over medium heat.
Pour the eggs into the pan, and let them cook until partially set.
Add cheese and spinach on one side of the omelette.
Fold the omelette in half and cook for 1–2 minutes until cheese melts.
