Ingredients:
1 whole-grain English muffin
1/2 ripe avocado
1 small tomato (sliced)
1/4 tsp olive oil
Salt and pepper to taste
Instructions:
Toast the English muffin until crispy.
Mash the avocado and spread it evenly on both halves of the muffin.
Layer tomato slices on top and drizzle with olive oil.
Sprinkle with salt and pepper, and serve immediately.
