Crispy Garlic Parmesan Zucchini Fries
Ingredients:
- 2 medium zucchinis
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 1/2 cup all-purpose flour
- Olive oil spray
Instructions:
- Preheat the Oven:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Zucchini:
- Wash and dry the zucchinis. Cut them into fry-like strips, approximately 3 inches long and 1/4 inch thick.
- Set Up Breading Stations:
- Place the flour in a shallow bowl.
- In a second bowl, beat the eggs until smooth.
- In a third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Bread the Zucchini:
- Coat each zucchini strip lightly in flour, then dip it into the egg mixture. Finally, roll it in the breadcrumb mixture, ensuring it’s evenly coated.
- Arrange on Baking Sheet:
- Place the breaded zucchini strips on the prepared baking sheet in a single layer, ensuring they don’t overlap. Spray lightly with olive oil for extra crispiness.
- Bake:
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Serve:
- Remove from the oven and let cool slightly. Serve immediately with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
Tips:
- For extra crispiness, use an air fryer. Cook at 400°F (200°C) for about 10-12 minutes, shaking the basket halfway through.
- Feel free to experiment with seasonings, like adding paprika or cayenne for a spicy kick.
