Ingredients:
- 1 medium eggplant (sliced)
- 1 cup marinara sauce
- 1 cup shredded mozzarella
- 1/4 cup grated Parmesan
Instructions:
Serve with garlic bread or a side salad.
Preheat oven to 200°C (400°F).
Arrange eggplant slices on a baking sheet, top with marinara sauce, mozzarella, and Parmesan.
Bake for 15–20 minutes until cheese is melted and bubbly.
