- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups Fruity Pebbles cereal
- 1 cup mini marshmallows
Instructions
1. Prepare the Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until a dough forms.
2. Add the Mix-Ins
- Fold in the Fruity Pebbles cereal and mini marshmallows, being careful not to crush the cereal too much.
3. Bake the Cookies
- Scoop heaping tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Tips for Perfect Fruity Pebble Marshmallow Cookies
- Use room-temperature butter for the best texture.
- Chill the dough for 15-20 minutes before baking to prevent the marshmallows from melting too quickly.
- Add extra Fruity Pebbles on top of each dough ball for a more colorful presentation!
