Garlic Herb Roasted Chicken Drumsticks
Ingredients:
For the Marinade:
- 8 chicken drumsticks: Choose fresh, skin-on drumsticks for the best results.
- 3 tablespoons olive oil: Helps carry the flavors and keeps the chicken moist.
- 4 garlic cloves (minced): Adds a bold and aromatic flavor.
- 1 teaspoon smoked paprika: Gives a slightly smoky flavor and enhances the color.
- 1 teaspoon dried oregano: Brings earthy, herbaceous notes.
- 1 teaspoon dried thyme: Complements the garlic and oregano beautifully.
- 1 teaspoon salt: Essential for seasoning.
- ½ teaspoon black pepper: Adds a subtle kick.
Optional Garnish:
- 2 tablespoons fresh parsley (chopped): Adds freshness and a pop of color.
Instructions:
Step 1: Preheat the Oven
Set your oven to 400°F (200°C). While the oven preheats, prepare the marinade and chicken to save time.
Step 2: Prepare the Marinade
In a mixing bowl, combine olive oil, minced garlic, smoked paprika, dried oregano, dried thyme, salt, and black pepper. Stir until the mixture becomes smooth and aromatic.
Step 3: Marinate the Chicken
- Place the drumsticks in a large mixing bowl or zip-lock bag.
- Pour the prepared marinade over the chicken. Using your hands or a spatula, coat each piece thoroughly.
- Let the chicken rest in the marinade for 15–30 minutes. (For even better flavor, marinate for 2–4 hours in the refrigerator.)
Step 4: Arrange the Drumsticks
- Lightly grease a baking dish or line it with parchment paper.
- Arrange the marinated drumsticks in a single layer, ensuring they do not overlap. Pour any leftover marinade over the drumsticks.
Step 5: Roast the Chicken
Bake in the preheated oven for 35–40 minutes.
- After 20 minutes, flip the drumsticks to ensure even cooking.
- The chicken is ready when it reaches an internal temperature of 165°F (75°C) and has a golden-brown, crispy exterior.
Step 6: Garnish and Serve
Remove the chicken from the oven and let it rest for 5 minutes. Sprinkle with freshly chopped parsley before serving.
Tips for Success:
- Crispier Skin: If you prefer extra crispy skin, broil the drumsticks for the last 3–5 minutes of cooking.
- Side Pairings: These drumsticks pair wonderfully with roasted vegetables, garlic mashed potatoes, or buttery rice pilaf.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to retain the crispy texture.
