Loaded Nachos with Guacamole and Salsa Recipe
Ingredients:
For the Nachos:
- 1 bag tortilla chips
- 1 1/2 cups shredded cheddar or Monterey Jack cheese
- 1 cup black beans (rinsed and drained)
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños (pickled or fresh)
- 1/4 cup diced red onions
- 1/4 cup chopped fresh cilantro
For the Guacamole:
- 2 ripe avocados
- 1 small lime (juiced)
- 1/4 cup chopped red onion
- 2 tbsp chopped cilantro
- Salt and pepper to taste
For the Salsa:
- 3 ripe tomatoes (diced)
- 1 small onion (finely chopped)
- 1/2 cup fresh cilantro (chopped)
- 1 small jalapeño (finely chopped)
- 1 lime (juiced)
- Salt to taste
Instructions:
- Prepare the Guacamole:
- Mash the avocados in a bowl.
- Mix in lime juice, chopped onion, cilantro, and a pinch of salt. Adjust seasoning as needed.
- Prepare the Salsa:
- Combine diced tomatoes, onion, cilantro, jalapeño, lime juice, and salt in a bowl. Mix well and refrigerate until ready to use.
- Assemble the Nachos:
- Preheat your oven to 375°F (190°C).
- Spread the tortilla chips on a baking sheet or oven-safe platter.
- Layer with black beans, shredded cheese, diced tomatoes, jalapeños, and red onions.
- Bake for 10-12 minutes or until the cheese is melted and bubbly.
- Serve:
- Top the baked nachos with fresh cilantro.
- Serve hot with bowls of guacamole and salsa on the side for dipping.
