Quinoa Power Bowl with Poached Egg
Ingredients:
- For the Bowl:
- 1 cup cooked quinoa
- 1/2 avocado, sliced
- 1/2 cup black beans (rinsed and drained)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1 cup kale, finely chopped
- For the Toppings:
- 1 poached egg
- Creamy chipotle or sriracha dressing
- Optional: Fresh cilantro, lime wedges, and scallions
Instructions:
- Prepare the Base:
- Cook quinoa according to package instructions and let it cool slightly.
- In a large bowl, combine cooked quinoa, black beans, kale, and cherry tomatoes.
- Poach the Egg:
- Bring a pot of water to a gentle simmer, add a splash of vinegar.
- Crack an egg into a small bowl and slide it carefully into the simmering water.
- Poach for 3–4 minutes, then remove with a slotted spoon.
- Assemble the Bowl:
- Divide the quinoa mixture into serving bowls.
- Arrange avocado slices, feta cheese, and the poached egg on top.
- Add Dressing and Garnish:
- Drizzle with creamy chipotle or sriracha dressing.
- Garnish with fresh cilantro and lime wedges, if desired.
