Ingredients

For the Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Tuscan Butter Sauce:

  • 1/4 cup unsalted butter
  • 5 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • Lemon slices for garnish

Instructions

1. Prepare the Salmon

  1. Pat the salmon fillets dry with a paper towel to remove excess moisture. This helps the fish cook more evenly.
  2. Season both sides of each fillet with salt and pepper to taste.

2. Cook the Salmon

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Once the oil is hot, add the salmon fillets and cook for about 4-5 minutes on each side, or until the salmon is golden brown and cooked through. The salmon should easily flake with a fork.
  3. Once cooked, remove the salmon from the skillet and set it aside on a plate.

3. Make the Tuscan Butter Sauce

  1. In the same skillet, melt 1/4 cup unsalted butter over medium heat. The leftover salmon bits in the pan will add extra flavor to the sauce.
  2. Add 5 minced garlic cloves and sauté for 1-2 minutes until fragrant and golden brown.
  3. Pour in 1/2 cup heavy cream and 1/4 cup chicken broth. Stir well to combine the cream and broth, creating a smooth sauce.
  4. Add 1/4 cup grated Parmesan cheese, 1 teaspoon lemon juice, 1 teaspoon dried oregano, and 1 teaspoon dried basil. Stir until the sauce thickens and the cheese melts into the cream.

4. Add the Spinach and Sun-Dried Tomatoes

  1. Stir in 2 cups fresh spinach and 1/2 cup chopped sun-dried tomatoes. Continue to stir until the spinach wilts and the sauce becomes a creamy, flavorful base.

5. Combine the Salmon and Sauce

  1. Return the cooked salmon fillets to the skillet with the sauce. Spoon some of the creamy Tuscan sauce over the fillets.
  2. Let the salmon simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld together.

6. Serve

  1. Transfer the salmon fillets to serving plates, spooning the Tuscan butter sauce over the top.
  2. Garnish with fresh lemon slices and a few extra herbs, if desired.

Tips for Success:

  • Use fresh salmon for the best flavor. Look for fillets with bright, pink flesh and avoid those with fishy odors.
  • Don’t overcook the salmon: Salmon is best when it’s tender and slightly flaky. Keep an eye on it while cooking.
  • Add a little extra garlic if you’re a garlic lover—it really complements the richness of the sauce!
  • Serve with sides: This dish goes perfectly with pasta, mashed potatoes, or a simple green salad.
