Ingredients
For the Salmon:
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- Salt and pepper to taste
For the Tuscan Butter Sauce:
- 1/4 cup unsalted butter
- 5 garlic cloves, minced
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- Lemon slices for garnish
Instructions
1. Prepare the Salmon
- Pat the salmon fillets dry with a paper towel to remove excess moisture. This helps the fish cook more evenly.
- Season both sides of each fillet with salt and pepper to taste.
2. Cook the Salmon
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the salmon fillets and cook for about 4-5 minutes on each side, or until the salmon is golden brown and cooked through. The salmon should easily flake with a fork.
- Once cooked, remove the salmon from the skillet and set it aside on a plate.
3. Make the Tuscan Butter Sauce
- In the same skillet, melt 1/4 cup unsalted butter over medium heat. The leftover salmon bits in the pan will add extra flavor to the sauce.
- Add 5 minced garlic cloves and sauté for 1-2 minutes until fragrant and golden brown.
- Pour in 1/2 cup heavy cream and 1/4 cup chicken broth. Stir well to combine the cream and broth, creating a smooth sauce.
- Add 1/4 cup grated Parmesan cheese, 1 teaspoon lemon juice, 1 teaspoon dried oregano, and 1 teaspoon dried basil. Stir until the sauce thickens and the cheese melts into the cream.
4. Add the Spinach and Sun-Dried Tomatoes
- Stir in 2 cups fresh spinach and 1/2 cup chopped sun-dried tomatoes. Continue to stir until the spinach wilts and the sauce becomes a creamy, flavorful base.
5. Combine the Salmon and Sauce
- Return the cooked salmon fillets to the skillet with the sauce. Spoon some of the creamy Tuscan sauce over the fillets.
- Let the salmon simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld together.
6. Serve
- Transfer the salmon fillets to serving plates, spooning the Tuscan butter sauce over the top.
- Garnish with fresh lemon slices and a few extra herbs, if desired.
Tips for Success:
- Use fresh salmon for the best flavor. Look for fillets with bright, pink flesh and avoid those with fishy odors.
- Don’t overcook the salmon: Salmon is best when it’s tender and slightly flaky. Keep an eye on it while cooking.
- Add a little extra garlic if you’re a garlic lover—it really complements the richness of the sauce!
- Serve with sides: This dish goes perfectly with pasta, mashed potatoes, or a simple green salad.
